Halloween Cupcakes

These cupcakes are easy to make and kids will enjoy helping you decorate them.  They make excellent treats for visiting trick or treaters, or can be given out in goodie bags at the end of a party.  They also look great on a table laid out with Halloween party food for adults as well as children.  You don’t have to decorate them with the pumpkin icing – you can do whatever you like.  You could use the writing icing to make a spider’s web design on top of each cake, or use store-bought decorations.

Ingredients

  • 2/3 cup of butter
  • 2/3 cup of sugar
  • 1 ½ teaspoons of vanilla extract
  • 3 eggs
  • 1 cup of self-raising flour
  • 1 teaspoon of baking powder
  • 1/2 cup of  good quality cocoa powder

For Decorating

  • 1/3 cup of butter
  • 2 tablespoons of milk
  • 2 cups of icing sugar
  • 1 pack of ready made colored icing
  • 1 pack of ready made writing icing

Method

Set your oven to 350 degrees Farenheit, then get 2 bun tins and put 24 paper cake cases in them.

Put the butter, sugar and vanilla extract in a large mixing bowl and beat until the mixture is smooth.

Beat the eggs and fold them into the mixture.  Then fold in the flour, baking powder and half the cocoa.

Spoon the mixture into the paper cases.  There should be enough for 24 cupcakes.

Bake for between 20 and 25 minutes.  You should know when they are done as they will have risen and they will be springy to the touch.  Leave the cupcakes to cool on a wire rack.

Icing

Put the butter for the icing in a pudding bowl with the rest of the cocoa and melt it over a pan of hot water.

When the butter has melted, remove it from the heat and add the milk and the icing sugar.  Mix it together to make your chocoloate icing.

Ice each cake with the chocolate icing using a plastic spatula or knife.

Then make some orange icing by mixing some yellow and read icing from your pack.  Roll out the orange icing and use a cutter or a knife to make small pumpkin shapes.  Stick these on top of each cake and add a green stalk using the green icing and draw face with the writing icing.
